Just to get you jump-started, here are a few ideas: A cheeseburger, but instead of the bun use two grilled cheese sandwiches around the patty. (An idea totally ripped off from Britton's in Sandy. But imagine it with a blue cheese burger. Or a goat cheese burger with pesto.) Jazz up the traditional squash and cheese casserole by adding green chilies, jalapenos and cilantro and using crushed tostados instead of crackers on the top.
