Park City Dining Profile: Freshies Lobster Co.

“From shore to door in 24” is the company’s motto. You have to admit it’s a hell of a more impressive claim than Domino’s half-hour. After all, these cold-water crustaceans live off the coast of Maine; they have to be trapped, packed in icy water to slow their metabolisms, packaged so they won’t harm each other and shipped overnight via air freight.

And that’s what Ben Smaha and Lorin Tedeschi insist on, because they know their lobsters. Ben grew up in Cape Elizabeth, Maine, surrounded by lobstermen and lobster shacks. At 17, he traded in his kayak for five lobster traps and created a program for at-risk youth, teaching them how to earn a day’s wages and become self-sufficient. His winters are spent ski patrolling at The Canyons. Lorin’s from New Hampshire, where she also ate her share of lobsters growing up. Since mountain dwellers may not have all the know-how or gizmos necessary for cooking lobsters, Freshies also sells lobster pots, crackers and picks, and details several ways of cooking them—from simple steaming to more elaborate preparations.
