A dessert to die for at Faustina
Dessert is almost always too much, unless it’s a soufflé. And—lucky for those with a sweet tooth—soufflés are reappearing on menus. Airy, eggy, with just a lick of sugar, a soufflé is a light indulgence, ending dinner on an upbeat note. Take Faustina’s blueberry soufflé—at least, I’ll take it. Its browned, wildly craggy surface rising high above the fluted walls of a soufflé dish break open to reveal a shockingly blue foam. Its ghostly berry flavor is heightened by the lavender-scented honey cream gurgled into its middle by your server. This is a grand finale.
