Caramelized Black Cod Serves 6

6 cod fillets

For the marinade: 1 ¼ cups sugar1 cup sake 1 cup mirin (sweet sake) 5 ½ cups white Miso (Shiro miso)

Dissolve sugar with sake and mirin, then whisk in the miso, a little at a time. In a saucepan, over low heat, cook for 30 to 45minutes, stirring frequently. Set aside 1 or 2 cups for glazing. Cool completely.

Place fish filets in marinade, covering fish completely. Marinate for two days, then rinse fish completely. Fish must be completely free of marinade.

Preheat oven to 425 degrees. Place fish on sheet pan, then glaze with the extra miso mixture. Bake cod until golden brown and caramelized. When fish is cooked, pull bones out with tweezers, then serve.
