Except for the wool coats, the above pic (of the sheep at Robert Sinskey's biodynamic winery, whose wine is coming soon to a St. Regis near you) doesn't represent Utah in spring—we're still white, not green. But spring is coming to our plates, anyway.

2. Another top chef has signed on with SuAn Chow's Chow Truck to create this month's special Asian-style taco. (In March, Salt Lake City-based brothers Roger and Rod Livingston of R&R Barbecue - top contenders in the 2010 Kansas BBQ Society -made a beef brisket taco with apple cider vinegar-laced coleslaw, avocado, their secret BBQ sauce and a sprinkling of feta.

"It was off the charts," says Chow The brothers' second creation, a shredded pork butt used in a quesadilla with their secret BBQ sauce, roasted pasilla peppers and caramelized onions on a chipotle tortilla with a mango salsa, was equally popular.)

April stars Ryan Lowder, chef-owner of Copper Onion, who's hawking a pork belly taco with ginger-marinated carrots, scallions, mint, cilantro, jalapeno wheels and Snake River Farm pork belly sprinkled with crunchy sesame seeds for $5.00.

Upcoming guest chefs include Michael Richey of Pago, Takashi Gibo of Takashi, Viet Pham of Forage and Romina Rasmussen of Les Madeleines.

3. The Sixth Annual Park City Cocktail Contest is Wednesday, April 6, from 6:30 to 9:30 at Edgar's Beers and Spirits Lounge at Deer Valley's Snow Park Lodge. It costs $10 for drinks and noshes, and the entertainment - watching Park City's best bartenders shake their way to fame - is free. I'm one of the judges; so is, more impressively, so will gold medalist Billy Demong.

4. J&G Grill at St. Regis Deer Valley hosts another Wine Maker Weekend this weekend, April 8-10. This one features Robert Sinskey Winery, which produces pinot noir and merlot wines from sustainably farmed vineyards (see the sheep, above) in the Carneros region of Napa Valley.

The weekend includes a Remede Spa reception with mini-treatments and wines from Robert Sinskey; an apres-ski (in Utah, a spring activity) tasting of Sinskey wines and J&G foods.
