“I wanted to pay homage to Lucia Di Lammermoor’s setting (Scotland), but didn’t want to get sucked into creating a Scotch Whiskey Drink. One of the first things I think of when I think of Scotland is; Haggis, so I tried to come up with a way to honor the classic Scottish dish, but make it more accessible to people who are either vegetarian or don’t want to throw down on some sheep guts regardless.

Our ‘haggis’ is made by taking vegetable scraps (peels, stems, etc.) from the kitchen that normally get thrown away, placing them in a vacuum seal bag with some herbs and water, this mixture is then sou vide over night and the liquid is strained off the next day to create the base. The result is a savory vegetal mixture that pairs great with the sweet/bitter of Bonal and herbaceous London dry style Big Gin. The veggie blend used will always be changing since we use whatever is discarded from the kitchen on a given day.”

Craft Cocktail: Wolf’s Crag

“I created this drink to represent the Scottish setting of this opera (Laphroaig Scotch), the Italian origin and language (Campari), and our Japanese cuisine (Hibiki Japanese Whisky and Ume Plum Liqueur). I also wanted to represent the darker side of love by providing a bittersweet flavor profile with a smoky kick from the Scotch inspired by the tragedy and horror in Act III of Lucia. The name comes from the “Wolf’s Crag Scene” (albeit the scene is often omitted from the performance), in which Enrico confronts Edgardo in his tower, Wolf’s Crag, to tell him that Lucia has married Arturo, and to challenge Edgardo to a duel.”

Craft Cocktail: Un Amore Celeste (“A Heavenly Love”)

“This is a take on a Rusty Nail, to symbolize the famous mad scene from Act 3 in the opera, when Lucia’s burning love and passion drive her to madness at which point she stabs her husband-to-be Arturo with a knife. “The name of the drink comes from a line she gives in the libretto, when after walking downstairs to the procession in her wedding dress, covered in blood and holding the knife in her hand. The flaming Absinthe hits your palate first — symbolizing her love that caused her descent into madness — followed by the smokey sweet honey of the Rusty Nail, and finishing with the wonderful lingering flavor of the rosemary at the end. Essentially a Scottish classic with a twist, proverbially going through the motions of the famously tragic, dramatic scene.”

Fresh Rosemary Sprig

let burn for 15 seconds
