Farm to Glass: Squatters

We’re offering snapshots of the libations competing in Salt Lake magazine’s annual Farm to Glass Cocktail Contest, here’s Squatters’ cocktail.

Nibley Park Cocktail

  • 7 oz Chasing Tail Golden Ale
  • 1.5 oz Beehive Barrel Reserve Gin
  • .75 oz Honey Syrup
  • 4 Mint Leaves 
  • 1.5 oz Chilled Black Tea

Method

Honey Syrup:

  • Combine 2 parts honey with 1 part warm water, then chill.

To Prepare Cocktail:

Add gin, honey syrup, and mint to shaker.  Shake over ice and double strain using a Hawthorne and mesh strainer (to keep the chunks of mint out of your teeth).  Add Chasing Tail and float the black tea on top.
