Red Iguana’s Salsa de Uña

Serves 6

6 medium-sized ripe tomatoes
1/2 large white onion, or one medium onion
1/2 bunch cilantro, chopped
1 large, fresh mango, diced
Juice of 2 limes
Juice of 1 small orange

Chop the tomatoes, onion and jalapeños into 1/4-inch dice. Mix all ingredients through the mango in a large bowl. Add juices and mix, then add salt to taste.
