Passion Flour Patisserie
Our dear friend Stuart Melling at Gastronomic SLC recently shared what he thinks is the next big dining trend in Salt Lake City. Spoiler alert: it’s plant-based dining. While I can give you a slew of great vegan restaurants cropping up, I am of course more interested in the desserts. Enter Passion Flour Patisserie.
Having opened their doors in June 2015, Passion Flour was one of the first tenants in the emerging Central 9th neighborhood. Chef/Owner Jessica Davies is introducing Salt Lake residents to a new world of vegan pastry, featuring classic French selections modified from the ones she learned to make at the French Pastry School in Chicago. It’s not easy to find flaky, “buttery” layers of a croissant without using actual butter or other animal byproducts, but Davies has it down!
In addition to the croissant, other favorites include the fruit tart, macarons, and my favorite, cake. One bite of the chocolate peanut butter cake and I knew I was a fan of this bakery, no matter if it is vegan. They are also conscious of other dietary restrictions, and provide a variety of gluten-free options, like the oatmeal cream pie, and even some that are soy-free, including the amazing matcha blackberry pound cake.
Prior to her return to Utah, Davies spent a few years in Hawaii, where she mastered the art of cake decorating for destination wedding clients. One of her favorite parts of running a bakery is taking custom cake orders for weddings, birthdays, or any other event. She will work with you to create any flavor or design you can imagine.
Many Utahns are wary of vegan fare, but Davies has made it her mission to provide dessert options that can be enjoyed by everyone, including her meat-loving family. Let me assure you, you will not be sacrificing any flavor by going vegan in this instance. The desserts are healthier as they naturally have zero cholesterol, and are made with all-organic ingredients.
