Sweet Endings: The Penguin Brothers

Of all the ways you can eat ice cream, perhaps one of the best is sandwiched between two soft cookies. The Penguin Brothers in Provo has some of the best cookie-ice cream combos in the state.

After a chance opportunity to purchase a pink food truck, brothers Blake and Brandon Barkdull started selling ice cream sandwiches in 2015. Last summer, they opened up a Provo storefront to make the sandwiches even more accessible. One look at their social media and you can tell they are having a good time running the business, which carries over to its customers.

Since its inception, The Penguin Brothers has offered ice cream from Rockwell, so rest assured you’re getting the best ice cream available in the state. Earlier this year, the shop started making its own cookies in order to maximize freshness. They are now made fresh daily, so you’ll always get soft cookies around your ice cream. The store offers at least five cookie flavors daily, including a gluten-free option.

Much of the fun is in playing around with all of the possible flavor combinations. The menu offers suggestions of popular combinations, like Inception, chocolate chip and double fudge cookies with cookie monster ice cream, Ron Burgundy, snickerdoodle cookies with strawberry Nutella ice cream, or my personal favorite, Golden Snitch, honeycomb ice cream sandwiched between oatmeal cookies. Get as creative as you want by pairing cookies with a variety of unique flavors, like fruity pebbles, lemon raspberry chip, and salted caramel pretzel.

The classic is the Big Bro sandwich, though you also have your choice of the Lil’ Bro, about half the size. The shop also offers what it calls a Penguin Pie: a large scoop of cookie dough is baked into a pie tin and served warm with ice cream on top. The melty ice cream paired perfectly with the warm cookie is large enough to share…if you can keep yourself from eating it all, that is.

You can bring The Penguin Brothers to your wedding or any other type of private event. The Barkdull brothers hope to expand north with new locations at some point. For now, it is certainly worth a trip to Provo now to try out the ice cream treats!
