We Olive Wine Pairing

Olive Oil and wine seem like an obvious pairing, but it is hard to know what to pair with it and how to pair it. Some olive oils are better meant for cooking and mixing and others are better meant for dipping and drizzling. Some wines are great for fish and others great for vegetables.

We Olive, located at Trolley Square in Salt Lake City, wants to make the pairing of these two tasty delights a bit easier for salivating appetites.

2016 Donkey & Goat “Gadabout” paired with Stuffed Peppadews

The sweetness and spiciness of the peppers are complimented very well with the richness and butteriness of the Gadabout.

2015 Scar of the Sea Chardonnay paired with Orchard Salad

Scar of the Sea is not your typical chardonnay. It is not overly oaked and is not buttery. It is very crisp like biting into an apple. It goes well with the Orchard Salad; bringing out the sweetness of the apples, peppers and dressing. It tones down the bitterness of the arugula and enhances the flavor of the walnuts.

2016 Ruth Lewandowski Dry Riesling “Dinos to Diamonds” paired with Arbequina Extra Virgin Olive Oil

2014 Ruth Lewandowski Carignan “Boaz” paired with Tuscan Blend Extra Virgin Olive Oil

This very limited offering was specially blended by the COOC Miller of the Year using Frantoio, Leccino, Pendolino, Coratina, and Maurino olives. Floral and herbaceous with a slight bitterness and strong pungency. This robust oil is best used on bold and hearty foods.

The Boaz with its dark fruit aromas and bold flavors compliment a bold Evoo. It tones down the intense bitterness of the Extra Virgin Olive Oil while bringing out its herbaceous qualities and the sweetness of the fruit.
